Raspberry Spiced Muffins with a Crumb Topping
Simply put, I love cinnamon. I’ll try cinnamon in practically anything – porridge, banana bread, bolognese, rice, you name it. So the other day when I was browsing around Damn Delicious & found the recipe for these Raspberry Spiced Muffins, I just couldn’t let it go. I had to make them.
Rather handily, we happened to have a punnet of raspberries in the fridge. I didn’t have to be in college for a few hours. No reasons not to bake the muffins presented themselves (besides my two assignments due the next day..), & so I listened to my stomach & gathered the ingredients.
The smell of these muffins when they were baking was almost too much to handle, & it only got better when I took them out. Cinnamon, nutmeg, ginger & the general baked goods smell meant I had one of the muffins eaten before it made it to the wire rack for cooling. It was perfection.
& don’t get me started on the crumb topping. Lets just say that I’ll be adding crumb toppings to my baked goods from now on. Without a doubt.
The whole thing combined – the crumb topping, the mixture of spices, the moist raspberries hidden inside – was right up my street & I am not one bit ashamed to say that it was me who ended up eating the majority of these delicious muffins.
