Peanut Brittle & Chocolate Chunk Ice-Cream
Okay, lets talk ice-cream. Leave the dirty dishes, the laundry, the family members, just leave everything for a few minutes & listen to me ramble on about ice-cream. In my humble opinion, I believe ice-cream is one of the best things in the food world. Even more than that, I believe homemade ice-cream is a million times better than your regular store bought ice-cream. In my mind, homemade ice-cream is on level par with the best of the best, even, dare I say it, with Häagen-Dazs, which we all have to admit is the best store bought ice-cream you can get.
Besides, it’s summer. Even if you for some reason don’t believe that ice-cream is one of the best things in the food world (& if so, then I’m sorry, but we can’t be friends), you have an obligation to eat & enjoy ice-cream during the summer months. It’s just too warm & sunny to NOT have ice-cream. Ice-cream is the perfect way to end a summer meal, be it Homemade Burgers with all your friends or just you & the other half, ice-cream fits into the end of every meal.Â
Also, have you ever realised how happy ice-cream makes people? When I came back from Zadar with no souvenir or small wooden trinket for The Boyf, I told him I’d make him ice-cream instead. The ice-cream had absolutely nothing to do with my being in Croatia, but I like to believe know for definite that he forgave me the very instant I showed him his own personal loaf tin of ice-cream. I mean, who could resist a nice bowl of homemade ice-cream?
Thankfully, The Boyf chose to share his ice-cream with all of our friends last night. When I say last night, I mean half one this morning. You know, prime ice-cream eating time. Regardless of the time, the whole loaf tin was devoured within a matter of minutes. You can only imagine the relief I felt knowing that I had already taken the pictures for the blog!Â
Basically, this ice-cream is the exact same as all of my other homemade ice-creams – simple, with no churning, no ice-cream maker, & no hassle. The ice-cream takes a few minutes to whip up & then at least 8 hours in the fridge, so you could make this in the morning & be enjoying it later on that night. The ice-cream is deliciously soft & creamy & infinitely better than store bought ice-cream. The chunks of peanut brittle & chocolate were laced throughout the entire body of the ice-cream, giving each bite a satisfying chewiness.Â
Makes 2 litresÂ
For the ice-cream:
3 x 250ml pots of creamÂ
1 tablespoon of vodka
1Â 400g tin of condensed milk
For the Peanut Brittle & Chocolate Chunks:
1 medium bar of peanut brittle, cut up into rough chunks
1 medium bar of your favourite chocolate, cut up into rough chunks
Method
In a large bowl, whisk all of the cream together until it becomes lightly whipped. Add the tablespoon of vodka & whisk around. Finally, add in the tin of condensed milk & mix around one last time. Â
Keeping a cupful of the peanut brittle & chocolate chunks to the side, add the rest of the brittle & chocolate into the bowl & mix thoroughly. Once mixed, pour the ice-cream into a large loaf tin & cover the top with the remaining cupful of peanut brittle & chocolate chunks.Â
Cover up your container & put in the freezer for at least 8 hours.Â
Serve chilled.
