Blueberry, Almond & Honey Porridge
As you know, I’m on a quest to discover the best possible porridge toppings. I never really was one for porridge before – I was a steadfast cereal child – but my quest has triggered a newfound porridge love affair. Suddenly, my tired morning-self doesn’t mind gathering all the ingredients and waiting for the porridge to become creamy & luscious on the hob – I relish it. In the course of my quest, I’ve discovered some truly great combos – my favourite being banana & Nutella – and some ringers, like orange & chocolate. As in, orange juice being used in the place of milk. It was bad. But! Today’s topping was great! May I present: Blueberry, Almond & Honey Porridge. A revelation.
Now that I’m smack bang in the middle of exam season, I really rely on my daily porridge to get me through the morning to lunchtime. Having porridge in the morning often means that I don’t even think about food until I see others readying their own lunch around 1pm – it’s a miracle! Regular cereals just don’t do it for me anymore. You have breakfast, 40 minutes later you’re already hungry, then you have a mid-morning snack, & then an early lunch. I mean, what is even the point? You just can’t beat a good bowl of porridge.
BLUEBERRY, HONEY & ALMOND PORRIDGE
SERVES 1
INGREDIENTS
1/2 cup oats
4-5 dashes of cinnamon
1 cup milk
a good handful of blueberries
a sprinkling of flaked almonds
a drizzle of honey
METHOD
In a small pot, stir together the oats, cinnamon, and the milk. Place over a low heat and stir frequently, cooking until creamy. This usually takes me about 5-minutes, but it depends on how thick you like your porridge.
Remove from the heat, pour into a bowl, and top with the almonds, blueberries & honey. Enjoy!
