Peanut Butter Cookies

Today was an excellent day. Nothing about today put me in a bad mood, not college, not work, not anything. Now, I don’t know if it’s just me, but those kind of days don’t happen all that often round here, there’s usually always SOMETHING. Okay, most days it’s a lot of things. But not today. The reason? I started my day of with a big helping of peanut butter. 

There I was, making my daily porridge, when it occurred to me that I’d never had banana & peanut butter as a topping before. I couldn’t let that happen. One big dollop of melted peanut butter later & all I could think about was baking these cookies. The recipe is one I’ve had bookmarked for quite some time. It’s from one of the baking blogs I follow, Sally’s Baking Addiction. Go there. Your life will be so much better after you do. I promise.

The recipe I used was the one for the ‘Rolo Stuffed Peanut Butter Cookies’, rather than the ’Peanut Butter Lovers’ Cookies’, because I didn’t have any a) peanut butter baking chips, b) peanuts, or c) peanut butter cups. So I just made the Rolo stuffed ones without the Rolo stuffing. Why? You guessed it. I also didn’t have any d) Rolos. However, I did have crunchy peanut butter, so I used that to give them a little bit of added texture.

The baking of these cookies was a huge leap of faith. The recipe says that after 8ish minutes they’re done, even though they’ll come out squishy & seem completely undone, but they’ll harden up as they cool. I was terrified taking them out. What if they weren’t really done? I wouldn’t have had time to make another batch before college. My whole day would have been completely ruined. Alas, they cooled & turned out beautifully.

These cookies.. They. Are. Amazing. The peanut butter taste isn’t too strong, but you know it’s there & you love it. They’re also surprisingly light for a peanut butter cookie. I definitely could have eaten most of these in one sitting. 

It’s simple. Want to have a good day? Make peanut butter cookies first thing in the morning. Trust me on this one.
