Part two of my Mexican feast comes in the form of these delicious Chicken Taquitos. They’re packed full of shredded chicken, cheesy goodness, pineapple chunks, & BBQ sauce. Okay, so the BBQ sauce makes it kind of more Tex-Mex than Mexican, but I doubt you’ll hear anyone complaining after their first bite.
I know it sounds really sweet, but the pineapple & BBQ sauce kind of cancel themselves out & make a mouthwatering combination. Trust me. The only problem we encountered was that there wasn’t enough BBQ sauce in the mix, so we slathered the top of the Taquitos in extra BBQ sauce & then sprinkled an extra helping of cheese on top. Like I said, mouthwatering.
We had these babies alongside the Red Rice that I posted about earlier. Have I mentioned that I love Mexican feasts? There are so many flavours & I don’t think we’ve ever had such a colourful dinner before & it was excellent. Whether you decide to make the Red Rice or these Chicken Taquitos or even the Chorizo & Roasted Pepper Quesadillas or none of the above, I hope you have an excellent Cinco de Mayo!
