Banana, Pecan & Nutella Swirled Cake Bars

Don’t you just love pecans? Pecans are by far one of the most better tasting nuts. Which is good, but in some ways it’s also a pain. For example, have you ever noticed that supermarkets are almost always out of bags of pecans? Seriously, finding even one bag at my local supermarket is an extremely rare occurrence. It’s kind of depressing. However, while wandering around the supermarket last week, I saw it. The last bag of pecans, hiding behind dozens of bags of walnuts. It would appear that the Banana Week gods were on our side. 

& I for one was extremely grateful. I was like those little aliens in Toy Story, kneeling on the floor in the supermarket & looking up while chanting “I am eternally grateful!”. Okay, so that didn’t really happen, but it did in my head. The minute I spotted the bag, I knew that these Banana, Pecan & Nutella Swirled Cake Bars would make an appearance during Banana Week. & what better day than Day 5? It means that you get to make these perfectly pecan-ey Cake Bars today & enjoy them all weekend long. If they last that long..

This is a recipe that I’ve had bookmarked for a while, but it’s a little hard trying to time the bananas browning & the availability of pecans for the same time, so it always got put off until a better time. Which finally arrived. Which is a good thing too, because it was the very first thing saved into my Cake folder on my bookmarks bar, & it made me kind of desperate everytime I saw it. & before you ask, yes, I do have a highly organized Baking folder with subcategories. I’m not ashamed of my addiction.

The recipe comes from one of my absolute favourite blogs, Damn Delicious. Nearly everything she posts about is bookmarked on my laptop. You probably guessed that already because most of the desserts I post up are usually adaptions of her recipes. I didn’t even think about adapting the recipe at all this time – it already sounded unbelievably perfect.

& believe me when I say it tasted perfect! It was sort of like banana bread, but better. This is quite possibly the lightest cake I have ever had, it just melted away on my tongue. Like everything else this week, it’s also deliciously banana-ey, in the best way possible. Also like almost everything else this week, it has the perfect amount of Nutella poking through its insides. Banana & Nutella just go together, it’s common sense. You know what else goes with banana & Nutella? Pecans! They are amazing. The pecans on the top make the whole thing nutty & crunchy & perfect. I’ve used the word perfect so much in this post that it’s almost beginning to not sound like a word to me. So before I convince myself it isn’t a real word: these Banana, Pecan & Nutella Swirled Cake Bars are absolutely perfect.
