Banana & Chocolate Chip Baked French Toast

Sometimes, very rarely, there are things that I feel are worth sacrificing sleep for. Actually, I only really feel that way about travel. Well not anymore. This morning when my alarm went off at 6am I was beginning to question my sanity. Is it really worth getting up at 6am for french toast? For this french toast – without a doubt!

I know. 6am. The thoughts of it make me slightly flinch in pain. But then I remember the beauty that was this french toast & everything is better again. You see, this isn’t just any french toast, this is Banana & Chocolate Chip French Toast. The king of french toasts, if you will. I will. It’s a well deserved title.

The recipe doesn’t exactly require getting up ridiculously early, but it does require cinnamon bread. & seeing as Ireland doesn’t seem to have a ready supply of cinnamon bread in the stores, I made my own (recipe coming soon!). Now, any normal person would have made the cinnamon bread well in advance so they wouldn’t have to get up at the crack of dawn to allow the bread to soak up the eggy french toast goodness. But I clearly don’t fall into the normal category. I only finished baking the bread at 12:30am, at which point it had to cool for ages before I could use it, & it all just turned into a bit of a shambles.

I think it’s the lack of sleep that’s making me ramble on like this. Moral of the story: don’t leave things till the last minute. Other moral of the story: never forget how long it takes to make bread from scratch. Most important moral of the story: Banana & Chocolate Chip Baked French Toast is totally worth it.

The layers are stuffed with banana & chocolate chips & cinnamon bread & vanilla goodness & then it’s all topped off with a crunchy oatmeal topping & oh my god are you drooling yet? It’s making me hungry again just thinking about how amazing this was. The original recipe serves 6, so I more or less halved it for Bosco & I (as much as I love him, he eats like a horse). Devoured within minutes of being plated up, there was barely time for me to take pictures!  Did we love it? I’ll let you examine the evidence & be the judge of that…
